Broad Beans with bacon, this is a versatile and hearty dish, delicious as a pasta sauce or a vegetable dish on its own.
Pancetta has a particular strong, smoky flavour but can be easily substituted with bacon.
Ingredients
1 onion
200g broad beans
100g pancetta or bacon
olive oil
couple of glasses of water
Heat the olive oil in a pan and add the onions. Soften the onions for a few minutes then add the pancetta. Cook for another minute and then add the broad beans. Stir so that the beans take on some of the oily juices and then add 2 glasses of water. Salt to taste. Cover and allow to simmer gently until the beans are cooked through.
Serve as a dish on its own, puree to make a paste to go on bruschetta or add to pasta (adding some of the pasta cooking liquid to lengthen the sauce) and serve with parmesan cheese.
